🍴 Ingredients

  • 2 whole lobsters
  • 3 tbsp brandy
  • 400ml heavy cream
  • 1 onion, diced
  • 2 celery stalks
  • 2 carrots
  • 4 garlic cloves
  • 400g crushed tomatoes
  • Bouquet garni
  • 2 tbsp tomato paste
  • Tarragon
  • Salt and cayenne

Cook lobsters, remove meat and reserve shells.

Roast shells in oven at 400F for 15 minutes.

Saute vegetables with tomato paste.

Add roasted shells and cover with water. Simmer 45 minutes for stock.

Strain stock through a fine sieve, pressing hard.

Saute lobster meat briefly in butter.

Flambee with brandy carefully.

Add strained stock and tomatoes, simmer 10 minutes.

Blend until smooth. Add cream and heat gently.

Season with cayenne and tarragon. Garnish with lobster pieces.
