🍴 Ingredients

  • 200g flat rice noodles
  • 200g shrimp, peeled
  • 100g firm tofu, cubed
  • 3 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 1 tbsp palm sugar
  • 3 garlic cloves
  • 2 shallots
  • 2 eggs
  • Bean sprouts
  • Spring onions
  • Crushed peanuts
  • Lime wedges

👨‍🍳 Instructions

Soak rice noodles in room-temperature water for 30 minutes; drain.

Mix fish sauce, tamarind and palm sugar into sauce.

Stir-fry garlic and shallots in very hot wok.

Add shrimp and tofu, cook until shrimp are pink.

Push to side, scramble eggs in the wok.

Add noodles and sauce, toss everything together on high heat.

Add bean sprouts and half the spring onions.

Serve topped with peanuts, remaining spring onions and lime wedges.
