  • 1.5kg yellow onions, thinly sliced
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 200ml dry white wine
  • 1.5L beef stock
  • 2 tbsp flour
  • Fresh thyme
  • 8 thick baguette slices
  • 200g Gruyere, grated

Melt butter and oil in a large heavy pot.

Add onions and cook over medium-low heat for 45-60 minutes, stirring occasionally, until deeply golden.

Add sugar and increase heat to caramelize further.

Add flour and cook 2 minutes.

Pour in wine and scrape up the fond.

Add stock and thyme. Simmer 20 minutes.

Toast baguette slices until crisp.

Ladle soup into oven-safe bowls, top with baguette and Gruyere.
