🍴 Ingredients

  • 1 large butternut squash, halved
  • 1 apple, peeled and diced
  • 1 onion, diced
  • 4 garlic cloves
  • 4 cups vegetable stock
  • 1/4 cup heavy cream
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • Fresh sage
  • Olive oil
  • Pumpkin seeds to garnish

Roast squash halves at 400F for 45 minutes until caramelized.

Scoop out flesh and set aside.

Saute onion and apple in olive oil until soft.

Add garlic, nutmeg and cinnamon, cook 1 minute.

Add squash flesh and vegetable stock.

Simmer 15 minutes then blend until perfectly smooth.

Stir in heavy cream and adjust seasoning.

Serve with a swirl of cream, crispy sage and pumpkin seeds.
