  • 2 large eggplants, sliced
  • 2 cups breadcrumbs
  • 2 eggs, beaten
  • 1 cup marinara sauce
  • 200g fresh mozzarella
  • 100g Parmigiano Reggiano, grated
  • Fresh basil
  • Salt
  • Olive oil for frying

Salt eggplant slices and let drain for 30 minutes; pat dry.

Dip in beaten egg, then coat in seasoned breadcrumbs.
