🍴 Ingredients

  • 400g linguine
  • 500g large shrimp, peeled and deveined
  • 6 garlic cloves, thinly sliced
  • 200ml dry white wine
  • 4 tbsp cold butter
  • 3 tbsp good olive oil
  • Red chili flakes
  • Fresh flat-leaf parsley, chopped
  • Juice of 1 lemon

Cook linguine in heavily salted water to al dente; reserve pasta water.

Heat olive oil over medium heat, add garlic do not let it brown.

Add shrimp in a single layer, cook 2 minutes per side until pink.

Remove shrimp and set aside.

Deglaze pan with white wine, scraping up any bits.

Reduce wine by half over high heat.

Swirl in cold butter off the heat.

Return shrimp, add chili flakes, parsley and lemon juice.

Toss with linguine, adding pasta water as needed for a silky sauce.
