🍴 Ingredients

  • 1kg lamb shoulder, cubed
  • 200g dried apricots
  • 2 onions, sliced
  • 4 garlic cloves
  • 1 can crushed tomatoes
  • 2 tsp ras el hanout
  • 1 tsp cumin and coriander
  • Preserved lemon, rinsed
  • Toasted almonds
  • Fresh cilantro
  • Couscous to serve

👨‍🍳 Instructions

Season lamb well and brown in batches in a tagine or Dutch oven.

Remove lamb and soften onions in the same pot.

Add garlic and all spices, cook 2 minutes until fragrant.

Return lamb, add tomatoes and enough water to cover halfway.

Cover and simmer on low heat for 1.5 hours.

Add dried apricots and preserved lemon in last 30 minutes.

Taste and adjust seasoning generously.

Serve over fluffy couscous, topped with almonds and cilantro.
