🍴 Ingredients

  • 4 salmon fillets, 180g each
  • 1 zucchini, ribboned
  • 1 cup cherry tomatoes, halved
  • 1 lemon, sliced
  • 4 garlic cloves, sliced
  • Fresh dill and thyme
  • 4 tbsp dry white wine
  • Olive oil
  • Salt and pepper

Preheat oven to 400F.

Cut 4 large squares of parchment paper.

Place zucchini ribbons and cherry tomatoes in center of each square.

Season the salmon fillets and place on top of vegetables.

Layer lemon slices, dill, thyme and garlic over salmon.

Drizzle with olive oil and 1 tbsp white wine per parcel.

Fold parchment over and crimp edges tightly to seal.

Bake for 15-18 minutes the parcel will puff up when done.

Serve sealed parcels at the table; let guests open their own.
