🍴 Ingredients

  • 500g very fresh sea bass or sea bream fillets
  • Juice of 8 limes
  • 1 red onion, very thinly sliced
  • 1 aji amarillo or chili, finely diced
  • Fresh cilantro
  • Salt
  • Choclo (large corn kernels)
  • Sweet potato, boiled and sliced
  • Cancha corn to serve

👨‍🍳 Instructions

Slice fish into 1cm cubes.

Rinse red onion in cold water 10 minutes to reduce harshness.

Place fish in a chilled bowl.

Pour over lime juice immediately.

The acid will start to cure the fish.

After 2-3 minutes, add onion, chili and cilantro.

Season generously with salt.

Taste the leche de tigre.

Serve immediately in chilled bowls.

Accompany with sweet potato, choclo and cancha.
