  • Laksa paste (store-bought or homemade)
  • 400ml coconut milk
  • 500ml chicken or prawn stock
  • 300g thick rice noodles
  • 200g shrimp, peeled
  • 100g tofu puffs, halved
  • Bean sprouts
  • Hard-boiled eggs, halved
  • Fresh cilantro and lime

Fry laksa paste in oil for 5 minutes until very fragrant.

Add coconut milk and stock.

Simmer 15 minutes, stirring occasionally.

Cook rice noodles separately; drain.

Blanch bean sprouts.

Fry shrimp until pink.

Build bowls: noodles in the bottom.

Ladle hot laksa broth over.

Arrange shrimp, tofu puffs, egg and sprouts.
