🍴 Ingredients

  • 6 large eggs
  • 500g tomatillos, halved
  • 200g fresh spinach
  • 1 poblano pepper, diced
  • 1 onion, diced
  • 4 garlic cloves
  • Fresh cilantro and parsley
  • 200g feta, crumbled
  • 1 tsp cumin
  • Avocado and warm tortillas to serve

Roast tomatillos and poblano under broiler until charred.

Blend into a rough green sauce with cilantro.

Saute onion until soft, add garlic and cumin.

Add spinach and wilt.

Pour in green sauce, simmer 5 minutes.

Make wells and crack eggs in.

Cover and cook until whites are set.

Crumble feta on top.
