🍴 Ingredients

  • 6 large eggs
  • 1 can crushed tomatoes
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 100g feta cheese
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp chili flakes
  • Fresh flat-leaf parsley

Heat olive oil in a wide pan over medium heat.

Saute onion and red pepper until softened, about 5 min.

Add garlic, cumin, paprika and chili flakes, cook 2 more minutes.

Pour in crushed tomatoes, season with salt. Simmer 10 min.

Use a spoon to make 6 wells in the sauce.

Crack an egg into each well carefully.

Cover and cook until whites are set but yolks still runny, 5-7 min.

Crumble feta on top, garnish with parsley. Serve with crusty bread.
