🍴 Ingredients

  • 450g strong bread flour
  • 350ml water
  • 9g salt
  • 100g active sourdough starter

👨‍🍳 Instructions

Mix flour, water, salt and starter. Rest 30 minutes (autolyse).

Perform 4 sets of stretch-and-fold over 2 hours.

Bulk ferment at room temperature until doubled, 4-8 hours.

Shape the dough into a tight boule or batard.

Place in a floured banneton seam-side up.

Cold retard in refrigerator overnight (8-16 hours).

Preheat Dutch oven at 500F for 1 hour.

Score the dough and bake covered for 20 minutes.

Remove lid and bake 20-25 minutes more until deep golden.
