🍴 Ingredients

  • 3 very ripe bananas, mashed
  • 200g all-purpose flour
  • 150g sugar
  • 80g butter, melted
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 100g walnuts, chopped

Preheat oven to 350F. Butter and flour a loaf pan.

Mash bananas thoroughly with a fork.

Whisk together melted butter, sugar, eggs and vanilla.

Stir in mashed bananas.

Fold in flour, baking soda, cinnamon and salt do not overmix.

Fold in most of the walnuts.

Pour into prepared pan and top with remaining walnuts.

Bake 55-65 minutes until a toothpick inserted comes out clean.

Cool in pan 10 minutes, then turn out onto a rack.
