  • 400g pizza dough
  • 4 tbsp zaatar spice blend
  • 4 tbsp extra virgin olive oil
  • Tomatoes and fresh mint to serve
  • Halloumi to serve (optional)

Preheat oven to 475F with a baking stone or heavy tray inside.

Divide dough into 4 balls.

Roll each into a thin 20cm disc.

Mix zaatar generously with olive oil to make a thick paste.

Spread paste over each disc, right to the edges.

Bake for 8-10 minutes until edges are crisp and topping is fragrant.

Serve hot with sliced tomatoes, fresh mint and halloumi.
